  • 1/2 cup brown sugar Can be replaced with honey or applesauce to reduce sugar.
  • 1 tsp vanilla extract
  • 1 tsp cinnamon For flavor, adjust according to taste.
  • 1/4 tsp nutmeg Optional, adds warmth to the flavor.
  • 1/2 cup nuts or dried fruit Add for texture if desired.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Chop the apples into small pieces, leaving the skin on.
  • In a large bowl, mix the chopped apples with oats, brown sugar, cinnamon, nutmeg, milk, eggs, and vanilla.
  • Pour the mixture into a greased baking dish, pressing it down slightly.

Baking

  • Bake in the preheated oven for 30 minutes, without opening the oven door.
  • Check for doneness by poking a fork into the center; if it’s not gloopy, it’s done.

Notes

Great reheated with a splash of milk or topped with Greek yogurt and chopped pecans. Store leftovers covered in the fridge for up to three days.
