  • 1 bunch Kale (curly or lacinato) Rip into bite-sized pieces, tough stems removed
  • 1 cup Parmesan cheese Grated, the more the merrier
  • 1 cup Croutons Homemade or store-bought
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice Freshly squeezed
  • 2 cloves Garlic Mashed
  • 1 tablespoon Dijon mustard For added zing
  • to taste Salt and pepper Regular seasoning
  • optional Anchovies For added flavor, not required

Preparation

  • Rip the kale into bite-sized pieces and discard the tough stems.
  • Drizzle the kale with olive oil and massage it until it softens and looks shiny.
  • In a bowl, mash the garlic, then whisk in the lemon juice, olive oil, Dijon mustard, and grated Parmesan.
  • Dump the dressing on the kale and mix thoroughly.
  • Scatter croutons and additional cheese on top.

Notes

Best served cold. Keep croutons separate until serving for maximum crunch. Store leftovers in an airtight container in the fridge.
