Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour Use room temperature for best results
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt A pinch is sufficient

Wet Ingredients

  • 1/2 cup butter, softened Room temperature butter works best
  • 1 cup granulated sugar
  • 1 large egg Can substitute with yogurt or applesauce
  • 1 teaspoon vanilla extract Feel free to add more for extra flavor

Add-Ins

  • 1 cup rainbow sprinkles Use your favorites, bright or pastel

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine flour, baking powder, and salt.
  • In another bowl, cream together the softened butter and sugar until fluffy.
  • Add the egg and vanilla extract to the butter mixture and mix well.
  • Gradually stir in the dry ingredients until just combined.
  • Fold in the rainbow sprinkles gently, being careful not to over-mix.
  • Scoop heaping tablespoons of dough onto a baking tray, spacing them apart.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until edges are slightly golden.
  • Allow to cool on the tray for a few minutes before transferring to a wire rack.

Notes

For best results, use room temperature ingredients. Store cookies in an airtight container for optimal freshness, and add a slice of bread to keep them soft.
