Ingredients
  

Salad Ingredients

  • 8 cups fresh baby spinach Don't skimp on the spinach.
  • 2 cups strawberries, sliced Use ripe, red strawberries.
  • 1 cup nuts (pecans or almonds) Chopping optional.
  • 1/2 cup feta or goat cheese (optional) For a tangy kick.

Dressing Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey or maple syrup Adjust to taste.
  • pinch black pepper Optional for seasoning.

Instructions
 

Preparation

  • Rinse the spinach well and pat dry.
  • Hull and slice the strawberries.

Assembly

  • In a bowl, toss the spinach and strawberries together.
  • Add nuts and cheese if using.
  • Drizzle with olive oil and balsamic vinegar.
  • Add honey if desired and toss lightly to combine.
  • Taste and adjust ingredients as needed.

Notes

Add avocado for creaminess, or swap nuts for seeds. Store dressing separately for best results.
