Salad Ingredients

  • 8 ounces ribeye or sirloin steak Use whatever you’ve got or what’s on sale.
  • 4 cups salad greens Mix of lettuce, spinach, or kale.
  • 1 cup cherry tomatoes Halved.
  • 1 small red onion Sliced.
  • 1/4 cup sharp cheese Blue or feta recommended.
  • 2 tablespoons balsamic glaze Store-bought is fine.
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper A generous amount needed.
  • optional crispy onions For added crunch.

Instructions
 

Preparation

  • Let the steak sit at room temperature for about 10 minutes.
  • Sprinkle both sides of the steak with salt and black pepper.

Cooking

  • Heat a skillet over high heat until very hot.
  • Cook the steak for 3-4 minutes on each side for medium-rare.
  • Remove from the pan and let it rest for a few minutes before slicing.

Assembly

  • In a large bowl, combine salad greens, cherry tomatoes, and red onion.
  • Slice the rested steak and place it on top of the salad.
  • Drizzle with balsamic glaze and add cheese on top.
  • Optional: add crispy onions for extra crunch.

Notes

For meal prep, keep the steak and salad separate until serving. This salad works well with grilled chicken or roasted chickpeas for a vegetarian option.
