Tomato Basil Ground Turkey Skillet

Ingredients
  

Main Ingredients

  • 1 lb Ground turkey Lean ground turkey preferred
  • 1 can Diced tomatoes Fresh tomatoes can also be used
  • 1 cup Fresh basil Dried basil can be used in a pinch, but fresh is ideal
  • 1 clove Garlic, minced
  • 1 medium Onion, chopped
  • 2 tbsp Olive oil
  • to taste Salt Essential to bring out the sweetness of the tomatoes
  • to taste Pepper

Optional Add-ins

  • 1 cup Spinach Can be added for extra nutrition
  • 1 cup Mushrooms, sliced Can replace part of the turkey for a hearty option
  • 1 cup Shredded mozzarella Sprinkle on top at the end

Instructions
 

Preparation

  • Heat olive oil in a deep nonstick skillet over medium heat.
  • Add chopped onion and sauté until it starts to soften.
  • Add ground turkey to the skillet, breaking it up as it cooks.
  • Stir in minced garlic, salt, and pepper, and cook until the turkey is almost cooked through.
  • Add diced tomatoes, and let it simmer for about 7 minutes.
  • Stir in fresh basil, turn off the heat, and mix well.
  • Optionally, top with spinach or mozzarella before serving.

Notes

Leftovers taste even better the next day. Store in an airtight container in the fridge for up to 3 days or freeze for later. Reheat gently on the stove for best results.
